Silky red pepper soup

Sweet peppers, a little smoke, and an acid finish make this bowl feel much bigger than its ingredient list. Keep the seeds and toasted bread close.

The method

Make it feel easy.

01

Roast peppers, onion, and garlic at 425°F until softened and dark at the edges.

02

Blend the roasted vegetables with stock and smoked paprika until smooth. Warm gently in a saucepan.

03

Stir in vinegar, season with salt, and serve with pepitas and a thin pour of olive oil.

The useful note

Good food likes a little flexibility.

Use the recipe as a map, not a test. Taste as you go, and let the market or the hour make a few decisions.
