Citrus salmon, loud herbs

Broil this when you want dinner to taste like a plan: salmon gets a glossy citrus coat, the herbs stay fresh, and the whole thing lands on the table before anyone asks what is taking so long.

The method

Make it feel easy.

01

Heat the broiler and line a sheet pan. Pat the salmon dry, then season generously with salt and pepper.

02

Whisk citrus zest, juice, olive oil, and honey. Brush half over the salmon and let it sit while the broiler heats.

03

Broil 6–8 minutes until the edges caramelize and the thickest part flakes. Finish with remaining citrus dressing and herbs.

The useful note

Good food likes a little flexibility.

Use the recipe as a map, not a test. Taste as you go, and let the market or the hour make a few decisions.
